are used as a heating surface. In this evaporative system, plate assemblies are
similar to plate heat exchangers which are equipped with large passages for
vapor flow as the product plate and the steam plate are connected alternatively.
In this, the product passage is designed for the liquid on plate surfaces and
low-pressure drop in the vapor phase.
